Healthy Vegan Nachos

These types of recipes are my absolute favourite. They taste ‘junk-foodie’, but they’re not!

It’s super easy, quick and delicious. It ticks all the boxes if you’re a mama with young ones or working full time and you need a healthy meal on the table in no time!

Ingredients:

1kg potatoes, sliced on thick using the mandoline

1 tsp onion powder

1 can black beans

1 tsp smoked paprika

1 tsp cumin

1 avocado, mashed

1 lemon

Jalapeno or any other chilli

Coriander, as garnish

Spring onion, as garnish

Salsa:

2-3 large tomatoes, diced

1 tsp tomato paste

¼ tsp cumin

¼ cup coriander

1 stalk spring onion

1 clove garlic, crushed

Cashew sour cream:

½ cup cashews

1 sprig rosemary

1 clove garlic

½ lemon, juiced

Method:

Start by preheating the oven to 200 degrees celsius. Place sliced potatoes on a lined baking tray, sprinkle some onion powder on top and bake for 25 minutes or until soft when pierced with a fork.

While the potatoes are cooking, start making the other ingredients. Place black beans in a bowl with paprika and cumin, stir to combine and set aside.

To make your salsa, place all the ingredients in a bowl and stir.

For your sour cream, place all the ingredients in a high speed blender and blend until smooth.

Add avocado to a small bowl and mash until smooth. Stir through the juice of half a lemon.

Once potatoes are ready, assemble them in layers on a plate.

In the middle of the potatoes, place your black beans, salsa, sour cream, and avocado. Top with coriander, chilli, and spring onion and enjoy!
