Homemade Vegetable Stock.

This is literally a throw and go type recipe. It takes no time at all and it’s great to have on hand to add more flavour to meals.

You could even use it as a healing broth!

Serves: - Time: 1hr 10 minutes

Ingredients:

  • 2 celery sticks

  • 2 onions

  • 2 carrots

  • 1 tablespoon peppercorns

  • 2 bay leaves

  • 1 star anais

  • 8 dried shiitake mushrooms

Method:

  1. Fill large pot with filtered water and add all ingredients

  2. Bring to boil and simmer with lid half on for minimum of 1 hour (I like to leave it as long as I can)

  3. Turn off heat and strain contents. Once cooled, pour into jars or freeze for later use.

It’s now ready to use in soups, stews or anything else you wish to use it for.
