Vegan Gluten free Potato Gnocchi

This was so good, if you love pasta and want a healthier, delicious gluten free version, this is it!

Serves: 4 Time: 1 hr+

Ingredients:

1kg potatoes, diced

1 cup potato starch

1.5 cups chickpea flour

1/2 tsp Himalayan salt

Method:

Put a pot of water to boil and add potatoes until soft.

Once potatoes are soft, drain and mash with a potato masher.

Add in the potato starch and chickpea flour and kneed with your hands until a dough forms.

Section dough evenly and mold into stands.

Once completed, cut dough into 1 inch pieces. You can roll each piece over a fork to create ridges if you want but not necessary.

Bring a pot of water to boil and cook gnocchi for 4 minutes. Gnocchi should float to the top.

Use a slotted spoon to drain and serve with a sauce you desire.
