White Chocolate and Raspberry Crumble

Since Easter is around the corner, I wanted to share with you an easy and delicious recipe!

Ingredients:

2 cups gluten free oat flour

½ cup coconut sugar

½ cup shredded coconut

2 bananas, mashed

⅓ cup coconut milk

1 cup raspberries

⅓ cup coconut butter or vegan white chocolate

Topping:

½ cup almond meal

½ cup shredded coconut

2 tablespoons maple syrup

Method:

Preheat the oven to 180 degrees celsius.

Add to a large mixing bowl the oat flour, sugar, shredded coconut, and coconut milk. Mix well.

Next gently fold in the raspberries and coconut butter.

Once mixed through, transfer to a square or rectangle lined baking dish.

To make the topping, simply add all the topping ingredients to a bowl and mix together.

Once mixed, sprinkle on top of your raspberry mixture.

Place in the oven for 20-25 minutes.

You’ll know it’s ready when you pierce it with a fork and it comes out clean.

Leave to cool for 10 minutes or more before slicing and serving.
