Apricot and Coconut Bliss Balls (nut-free)

I’ve made these a few times and they’re always a winner! I originally made them for a new lactation mum as a way to help fuel her while breastfeeding.

I’ve since made them as little Christmas treats for our lovely neighbours.

These are also great to pop into your little’s lunchboxes as they’re nut free too!

Serves: many Time: 10 minutes

Ingredients:

400g dried sulphate free apricots

100g shredded coconut

100g gf rolled oats

100g pumpkin seeds

3 tablespoons of maple syrup

Method:

Place all the ingredients in a food processor and pulse until the mixture starts sticking together.

Spoon equal amounts of the mixture together and form into balls.

Place in the fridge to set until ready to serve.
