Raw Creamy Pasta

I made this for a friend for lunch and it was so fresh and creamy I wanted to share it with you. Using zucchini and cucumber noodles instead during especially in summer is a great way to use them up as well as hydrate with living water so here’s the recipe!

Serves: 2 Time: 15 minutes

You will need:

3 cucumbers, sprialised

2 zucchinis, sprialised

2 tomatoes, cubed

For the pesto:

1 bunch basil

1 clove garlic

Juice of half a lemon

1 avocado

Method:

In a bowl, combine cucumber and zucchini noodles and mix together.

For the pesto, combine all the ingredients in a blender and blend until smooth. If you need to add liquid to get it going you can add a bit of olive oil if you’re not oil free or water.

Once smooth, mix the pesto and noodles together until well combined.

Add your tomatoes on top and voila, easy and healthy lunch (or dinner)!
