Enoki Noodle Stir Fry with Satay Sauce

I absolutely LOVE mushrooms! Do you?

This variety is great as you can break them up and they resemble noodles! Using whole food as noodles is so much fun too and a great way to get in some extra nutrients.

I used a creamy sauce as I adore noodles with a creamy texture!

Serves: 2-3 Time: 30 minutes

Here’s what you’ll need:

2 packets enoki mushrooms, ends trimmed

2 bunches bok choy

500g button mushrooms, quartered

1 large onion, sliced

1 green capsicum, sliced

1 chilli, sliced

Basil leaves

Satay sauce:

2 heaped tbsps almond butter

2 tomatoes

2 sun dried tomatoes

2 cloves garlic

1 inch of fresh ginger

1 lime, juiced

1 tsp raw honey

1/4 cup water

Method:

Heat a large pan on medium and add button mushrooms, onion and capsicum.

Cook until slightly softened before adding enoki mushrooms, breaking it up before adding it to the pan.

Stir through.

Meanwhile to make the sauce, add all the ingredients to a blender and blend until smooth.

Add the sauce to the veggie stir fry and voila!
