Vegan Mushroom Burgers
If you’re craving a burger and are on the healing path then this won’t let you stray!
Served with a side of thick cut chips, you’ll feel like your indulging.. drool.
Serves: 2 Time: 45 minutes.
Ingredients:
For the patties:
1 large sweet potato, diced
2 tsp sesame seeds
1 clove garlic, crushed
1 tsp cumin
1 tsp smoked paprika
1 tsp turmeric
Toppings:
1 red onion, sliced
1 tbsp maple syrup
Rocket or salad greens
Coriander
Jalapeno
Avocado
8 portobello mushrooms, stems removed
Method:
Put a pot of water to boil and add sweet potatoes to a steam basket for 10-15 minutes. Once ready, set aside to cool down.
Preheat oven to 200 degrees celsius. In a large bowl, put the spices ands sesame seeds in a bowl, along with the sweet potatoes and mash a little and mix, until combined.
Roll into 4 even patties and place on a baking tray and in the oven for 20 minutes turning once inbetween.
While that’s cooking, put a small saucepan on low head and add onions and maple syrup. Cook for 10-15 minutes or until caramalised.
Once everything is ready, start assembling by using one mushroom as the burger bun, adding your patties, onions, greens, jalapenos and avocado. Top with another mushroom and serve!
These would go well with a side of thick cut chips!
