Vegan Mushroom Stroganoff

If you’re feeling like a comforting dish then this is it!

Hearty, warming and creamy.

Serves: 4 Time: 30 minutes

What you need:

1 onion, diced

3 garlic cloves, finely diced

2 cups mushrooms, sliced

1 bunch spinach, rinsed

1 tsp paprika

1 tsp rosemary

1 tsp thyme

2 tsp tomato paste

1 tablespoon coconut aminos

1 can coconut milk

Parsley for garnish

What to do:

Heat a large frying pan on medium and sweat the onions until translucent. Add garlic and cook for a minute or two.

Next, add your mushrooms and cook until softened. Add your spices for a minute or until fragrant before adding tomato paste, coconut aminos and coconut milk.

Cook this for about 5-10 minutes until sauce has reduced a little.

Turn off heat and add your spinach and put the lid on. Let it sit for a couple of minutes until spinach has wilted.

Sprinkle some parsley on top and enjoy!

I served mine with mashed potatoes and steamed asparagus, so good!
