Gluten free tabouli

Perfect for a quick lunch or as a side for a summer bbq!

Serves: 3 Time: 25 minutes

Ingredients:

  • 1 cup millet

  • 2 cups filtered water

  • 2 tablespoons extra virgin olive oil

  • 7-8 tomatoes, diced

  • 1 bunch parsley, finely chopped

  • 2 cloves garlic, crushed

  • 1 lemon, juiced

  • Salt and pepper to taste

Method:

  1. Heat a small pan on low and toast dry millet for 5 minutes, stirring frequently 

  2. Add water to pan and stir

  3. Bring to boil, put a lid on, turn head down and simmer for 15 minutes

  4. Try not to lift the lid off as the water will evaporate quickly

  5. Once 15 minutes is up, turn off the heat and leave for 10 minutes

  6. After 10 minutes, use a fork to fluff the millet

  7. Pour millet into a large bowl

  8. Add the remaining ingredients into the bowl and incorporate

  9. Taste and adjust if needed
