Raw Asian Salad
Gosh, I could eat this everyday!
It only takes me 15 minutes tops to throw this salad together and it really satisfies my savoury cravings.
I usually eat this for lunch, however you could use it as a side salad as well.
Serves: 1 Time: 15 minutes
Ingredients:
3 cucumbers, spiralised
2 carrots, julienned
2 purple carrots, julienned
1 spring onion, sliced
A few sprigs coriander, roughly chopped
2 tomatoes, sliced
1 tsp dried or fresh chilli
a sprinkle of dulse flakes (optional)
Dressing:
Juice of ½ lemon
1 tsp maple syrup
1 inch ginger, grated
1 clove garlic, crushed
Method:
In a bowl, place cucumber noodles, carrots, spring onions, coriander, tomatoes and chilli together.
To make dressing, simply mis all the ingredients together in a jar and pour onto the salad and stir through.
