Guilt-free Pancakes

Who doesn’t love pancakes right?

These are not only delicious, they’re actually pretty healthy too!

Gluten free baking isn’t the same usually but I have to say these taste like the fluffy pancakes I remember.

I’ve added wild blueberries, the ultimate adaptogen!

Serves: 4 Time: 20 minutes

You will need:

2 bananas, mashed

2 cups gluten free oat flour

2 cups water

1 tsp baking powder

Handful wild blueberries

Maple syrup

Method:

In a bowl, mash banana and set aside

In a separate, large bowl, add oat flour, water, baking powder and banana and mix together until a smooth batter forms.

Once smooth, at your berries and stir through.

Heat a frying pan on low and add a spoon full of pancake batter.

Cook for a minute or two, flip and continue until all batter is finished.

Stack desired amount of pancakes and top with berries and maple syrup.

How many pancakes do you do? I have a mega appetite in the a.m so I could easily smash 8! Don’t judge me haha
