Satay Noodle Salad

Ingredients: 

1 pack vermicelli rice noodles

2 cups red cabbage, thinly shredded

2 carrots, grated

2 cucumbers, spiralised

Red capsicum, finely sliced

1 red chilli, finely sliced

3 stalks of spring onions, sliced

Handful of basil 

1 sheet nori, sliced

Sesame seeds, to sprinkle on top (optional)

Roasted peanuts (optional)

For the Peanut Sauce:

1/2 cup almond butter

Juice of 1 Lime

1 tbsp tomato paste

2 cloves Garlic, minced

1/2 tbsp Ginger, grated 

1/2 tsp Coconut Sugar

2–4 tbsp Filtered Water

Method:

Cook the noodles according to packet instructions and set aside.

Prepare all the salad ingredients and place into a large bowl.

To make the sauce, simply add all the ingredients to a high speed blender and blend until smooth.

Add your noodles to your salad bowl along with the sauce. Stir through and top with basil, sesame seeds, chilli and roasted peanuts.
