Simple greens soup

This isn’t something I’d normally eat but sometimes in winter it’s hard to eat your leafy greens, and if this is the case, I know I can rely on a simple green soup to make sure I’m getting them in.

Serves 3. Time: 30 minutes

Ingredients:

5 potatoes, diced

1 onion, diced

2 cloves garlic, finely diced

1 stick celery, chopped

1 head broccoli, cut into florets and stalks chopped

50g kale, chopped

1.5 cups peas

2 tsp cumin

¼ bunch coriander, roughly chopped

½ lemon, juiced

Water to fill

Method:

Heat a pot on medium heat and add onion and cook until translucent before adding garlic for a minute or two.

Mix in your potatoes, broccoli, cumin and celery and sauteing for 5 minutes before adding water so the vegetables are just submerged.

Cook for 10 minutes or until potatoes are almost ready and add in your kale, coriander stalks and peas.

Cook for another 5 minutes and switch off heat.

Blend until smooth and serve.

Garnish with coriander leaves and lemon juice.
