Spiced Indian Lentil Soup

Nourishing, comforting and yum! Tip: double the recipe and freeze or save it for the next day as it will taste even better!

Serves: 4-6 Time: 30 minutes

You will need:

2 cups red lentils

1 large onion, diced

5 cloves garlic, finely chopped

2 teaspoons ginger, grated

1 tsp cumin seeds

1 tsp black mustard seeds

1 tsp coriander

1 tsp garam masala

1 tsp turmeric

2 tomatoes, diced

2 carrots, diced

2 celery sticks, diced

3.5 cups filtered water or homemade stock

Salt and pepper to taste

Lemon, juiced

Coriander to garnish

Method:

Heat a large pot on low/medium heat and sweat the onions until soft

Add garlic and ginger and cook for 1 minute before adding cumin and mustard seeds. Cook for another minute or 2 and then add other spices

Next, add veggies and cook until soft

Add tomatoes and cook until soft

Next, add red lentils and water and bring to boil before turning heat down to a simmer

Cook until lentils and veg are soft (roughly 10-15 minutes)

Plate up and squeeze lemon and top with finely chopped coriander
