Spiced Sweet Potato Slice
This recipe was so easy, you know those throw and go types, which is perfect for me!
I know it may sound weird using sweet potato in a dessert recipe but trust me, it works.
This would be great to put into kids lunch boxes or as a little treat.
Ingredients:
2 cups sweet potato, cubed
2 bananas, mashed
¾ cup maple syrup
1 tsp cinnamon
½ tsp nutmeg
1.5 cups almond meal
1 cup shredded coconut
1-2 bananas, sliced (as topping)
Method:
Preheat the oven to 160 degrees celsius.
Put a small pot of water to boil and place your sweet potatoes in a steam basket and cook for 10-15 minutes until soft.
Once potatoes are cooked, place in a large bowl and mash.
Add all the other ingredients into your bowl besides the sliced bananas and mix together well.
In a lined baking dish, add your sweet potato mixture and place in the oven for 50 minutes.
Add your sliced bananas on top, drizzle with maple syrup and cook for 10 minutes or until golden.
When ready, allow to cool before slicing and serving.
