Vegan butter cauliflower

I’m sure you’ve heard of butter chicken?

This is a vegan version using cauliflower! It tastes just as good as the original.

Serves: 4 Time: 30 minutes

Ingredients:

Sauce:

2 cloves garlic, chopped

1 can tomatoes

2.5 cups water

½ cup cashews

1 tbsp garam masala

1 tsp cumin

1 tsp coriander

1.2 tsp ginger powder

Cauliflower:

1 onion, chopped

1 head cauliflower, leaves and stems included, cut into florets ans stems chopped

Coriander to garnish

Freshly sliced chilli or dried chilli flakes

Method:

Put all the sauce ingredients in a high speed blender until smooth and set aside.

Head a large frying pan on medium and cook onions until translucent. Add cauliflower florets and stems and cook until softened

Add sauce to the frying pan and bring to a simmer and cover for 10 minutes or until cauliflower is soft.

Serve with quinoa, brown rice, or mashed potatoes and top with chilli or coriander.
