Immunity boosting soup.

If you feel you have a tickle in your throat like you or the kids may be coming down with something, cook this! This easy to digest meal is packed with immunity to help you fight off any viruses.

Serves: 4 Time: 40 minutes

Ingredients:

1 onion, diced

4 garlic cloves, finely diced

2 inch knob fresh ginger, grated

4-5 potatoes, diced

1 head broccoli, cut into small florets

2 carrots, finely diced

Handful green beans, cut into thirds

2 handfuls dried shiitake mushrooms

2 sticks celery, diced

2 teaspoons thyme 

2 teaspoons rosemary 

2 bay leaves

2 tablespoons tomato paste or 2 fresh tomatoes

Filtered water to fill or homemade stock

¼ head cabbage, finely sliced

Chopped parsley to garnish

Method:

Sweat the onions until soft and translucent and then add garlic and ginger until fragrant

Add all your veggies and mix until softened

Next, add mushrooms, spices and tomato paste and stir for a minute

Fill water so everything is covered and bring to boil

Once boiling, turn heat down and let simmer until veggies are soft (around 15 minutes)

Around the 10 minute mark, add cabbage and cook until translucent

Turn heat off and serve with topped parsley
