Vegan, gluten free hot cross buns

Vegan, gluten free hot cross buns! There are things you miss when you start on your healing journey.. this was one of them.

But I love getting creative in the kitchen and trying to remake the classics.

This version is a little crumbly.. I have plans to update the recipe once I get them to a better consistency but it still hit the spot taste wise!

Makes: 6-8 Time: 50 minutes

What you need:

2 cups oat flour

2 cups almond meal

3 tablespoons flax meal

2 teaspoons baking powder

1/2 cup extra virgin olive oil

1 cup almond milk

1/4 cup maple syrup

2 teaspoons vanilla extract

1/2 cup cranberries

3/4 cup sultana’s

1 teaspoon cinnamon

1 teaspoon mixed spice

1/2 teaspoon ginger

1/2 teaspoon nutmeg

Date syrup

What to do:

Preheat oven to 170 degrees celsius.

In a large bowl, mix all dry ingredients together, not including dried fruits

In a seperate bowl, mix wet ingredients except date syrup

Pour wet ingredients in dry and mix well

Add dry fruit and leave to stand for 10 minutes

Place in oven for 35 minutes

Once cooled, use date syrup for the crosses.
